Continue pouring in spirals, reaching 500g total by 2:30. Maintain a consistent water level—don't let it drop too low or rise too high.

Step 7: Final Pour (2:30-3:00)

Pour to your final target of 672g by 3:00. Pour gently to avoid agitating the bed too much.

Step 8: Drawdown (3:00-4:30)

Let the water drain completely. Total brew time should be 4:00-4:30 minutes. If it's faster, grind finer; if slower, grind coarser.

Step 9: Remove Filter and Serve

Lift out the filter and grounds. Give the Chemex a gentle swirl to mix the coffee, then pour and enjoy.

Chemex Pouring Technique

Spiral Pattern: Pour in concentric circles from center to edge, then back to center. This ensures even saturation.

Pulse Pouring: Pour in stages rather than one continuous pour. This gives you more control over extraction.

Pour Height: Keep the kettle spout 2-3 inches above the coffee bed. Too high creates turbulence; too low doesn't allow proper aeration.
